We are starting a new journey from Niigata, a rice-producing sake kingdom.
We are starting a new journey from Niigata, the “Rice Kingdom” of Japan, to the production of Japanese whiskey.
Our goal is to create “Made in Niigata” whiskey, using only Niigata-produced ingredients.
We are a small distillery, but we want to produce high quality whiskey carefully and little by little, and deliver it at a reasonable price.
We will continue to pursue our amber dream filled with stories, facing what we can do because we are a small distillery.

Our Commitment

Started in March 2011 with 3 producers. We believe that good whiskey is “first of all, good original whiskey. There are many other factors as well, but whisky making involves “what people can create” and “what is created by the environment, maturation, and the chemistry of the casks. Whiskey production involves the grinding of raw materials, saccharification, fermentation, distillation, and barrel aging, all of which are important processes, but we pay special attention to saccharification, fermentation, and distillation, which are “things that people can create. To obtain clean and clear wort for making delicious sake. We change the number of fermentation days depending on the use of yeast and the season, and control the temperature. The distiller is constantly evolving the brewing process by considering how to take heart during distillation to ensure a smooth drinking experience.
